Style:

The typical, mineral-richness of the farm is evident again in this subtly complex wine. Whiffs of nettles, gooseberries and tropical flavours combine on the nose with hints of asparagus, green peppers and ‘figiness’. The notes grow and build and linger on the palate and are excellent expressions of the rich terroir of Wedderwill. A zingy, crisp liveliness combined with a great ageing potential make this an excellent wine to collect and keep.

Origin:

The very versatile variety of grape comes from a south-facing slope, with strong soils of Oakleaf, Clovelly and a little Tukulu giving us a wide selection of excellent grapes to choose from. We only choose the most suitable grapes off these blocks, with only the highest quality for our small production volume. These blocks are characterised by cooler temperatures, low radiation and winds. As seventy-percent of our Sauvignon Blanc vineyards have been recently planted, we believe these have great future potential in increasing our quality.

Season: In every vintage, there’s something new

We’ve had a warm, dry autumn with an early winter and good rainfall towards the end. The critical flowering and berry set stages went off well with some initial uneven shoot growth (autumn). A warm Jan and Feb with some rainfall was followed by a cooler Mar. Winds were moderate – all in all resulting in a stunning season.

Vinification: A challenge to meet…

The grapes were picked at 22.8 balling. Crushed and left with skin contact for 8 hrs then the juice was settled leaving the fermentation to proceed with the clean juice. After fermentation the lease was stirred up frequently and left with the wine until bottling.

Our approach to achieving a balance:

With the managing of our cover crop and the revitalization of our microbial life and soil activity we believe that we shall achieve an optimal medium for our roots to grow in. This will give us healthy and strong plants with high activity.
The positioning, thinning out and gaining young shoot growth, in other words good canopy management together with scientific water measurement and sophisticated irrigation management will develop grapes that are well balanced in their acids and sugars.
Our terroir with its relatively cool climate due to the altitude, slope form, and proximity to the Atlantic ocean give us phenolic ripeness that are unusually high and different to many other farms. Through a dedicated and focused management we strive to achieve the ripeness to be at an optimum level when the sugars and acids are just right for harvest.
