The aging of our cool climate Sauvignon Blanc brings out characters which are yet to develop in younger vintages. Proof that patience is a virtue.
The youthful, fresh stinging nettle, Cape gooseberry and mineral characters of the un-aged Sauvignon Blanc take on a delicious creamy smooth, litchi, Noble late character when left to age for 3 to 4 years. A taste well worth waiting a few seasons for. Our winemakers quest for perfection and a ‘time is meaningless in the face of creativity’ attitude has resulted in our 2007 Sauvignon Blanc being awarded 4.5 stars by the internationally respected John Platter Guide.
